Experiments have shown that if the carbonic acid gas thrown off daily by an adult male were solidified, it would amount to about seven ounces of solid carbon, which comes from fats, sugars and starches that are burned in the body. It is well to remember that there are various forms of burning or combustion.
When asked what to eat they commonly say, "Eat plenty nourishing food of the kinds that agree with you." They do not point out the fundamentals to their patients. Sometimes they advise avoiding combinations of milk and fruits. Sometimes they say that all starches should be avoided and in the next breath prescribe toast, one of the starchiest of foods.
Miles Middleton's father was the originator of "Middleton's Made Starch," which was used everywhere and was supposed to be superior to all other starches. Why "Made" scoffers could never understand, for it required precisely the same treatment as other starches.
Starches, fats, and proteids are animal foods, and upon such complex bodies alone can the animal kingdom be fed. Animal life, standing high up in the circle, is not capable of extracting its nutriment from the soil, but must take the more complex foods which have been manufactured by plant life. These complex foods enter now into the animal and take their place in the animal body.
Bananas differ from the juicy fruits in that they consist almost entirely of starches, dextrines and sugars. They belong to the carbohydrate groups and should be used sparingly by people suffering from intestinal indigestion. However, we do not share the belief entertained by many people that bananas are injurious under all circumstances.
As long as these vegetables are green and in the pulp, they contain large quantities of sugars and organic minerals, with but little starch and protein. As the ripening process advances, the percentages of starches and proteins increase, while those of the sugars and of the organic minerals decrease.
By the time the food has gone a third of the way down the small intestine, a good share of the starches in it have been turned into sugar and absorbed by the blood vessels in its wall; and the meats, milk, eggs, and similar foods have been digested in the same way. There still remains the bulk of the fats to be disposed of.
In this ultra-violet region lie the X-Rays, and the other recently discovered high degree rays; also the actinic rays which, while invisible to the eye, register on the photographic plate, sunburn one's face, blister one's nose, and even cause violent explosions in chemical substances exposed to them, as well as act upon the green leaves of plants, causing the chemical transformation of carbonic acid and water into sugar and starches.
If we looked into the matter more closely, we should find that what has happened is that the starch and the sawdust have changed into quite different substances. Starches are insoluble in water; that is, although they can be softened and changed into a jelly-like substance, they cannot be completely melted, or dissolved, like salt or sugar.
