The luxuriant vegetation of the globe extracts its nitrogen from the soil in a form more complex than either of the compounds here mentioned; for, as we have seen, it is nitrates chiefly that furnish plants with their nitrogen food factor. But nitrates contain considerable oxygen.

Although small quantities of the nitrates had been sent to Europe for chemical purposes chiefly the manufacture of gunpowder no considerable amount was exported until a fortuitous discovery was made by a Scotchman named George Smith. After wandering over the world for some time Smith settled down in a little village near Iquique, where he had a small garden containing fruit-trees and flowers.

She needs nitrates for her explosives, oil for her motors, bread for her sixty-five millions of inhabitants. For all this she has made provision, but the day will come when her granaries will be empty and her reservoirs dry. How will she fill them?

Besides sugar, which is present in this sap to the extent of 616 grains nearly an ounce and a half per gallon, there are present a mere trace of mucilage; no starch; no tannin; 31/2 grains per gallon of ammoniacal salts yielding 10 per cent. of nitrogen; 3 grains of albuminoid matter yielding 10 per cent. of nitrogen; a distinct trace of nitrites; 7.4 grains of nitrates containing 17 per cent. of nitrogen; no chlorides, or the merest trace; no sulphates; no sodium salts; a little of potassium salts; much phosphate and organic salts of calcium; and some similar magnesian compounds.

This knowledge of the ripening process is further teaching the farmer how to prevent waste. In the ordinary decomposition of the compost heap not an inconsiderable portion of the nitrogen is lost in the air by dissipation as ammonia or free nitrogen. Even his nitrates may be thus lost by bacterial action.
