The next experiment was to determine the volume of oxygen absorbed by a known quantity of yeast, the yeast living in contact with air, and under such conditions that the absorption of air was comparatively easy and abundant. The solution of potato starch is less stable than the soluble starch. It is regarded as a "solid solution" of iodine in starch. The following is an experiment on this point: On August 15th, 1875, we sowed a trace of yeast in 150 cc. The solution was prepared in one of our double-necked flasks, with the necessary precautions to secure the absence of germs, and the yeast sown was itself perfectly pure.

Boil the solution for two or three minutes after the iron has dissolved to remove any volatile hydrocarbons. Meanwhile prepare the reductor for use as follows: Connect the vacuum bottle with the suction pump and pour into the funnel at the top warm, dilute sulphuric acid, prepared by adding 5 cc. of concentrated sulphuric acid to 100 cc. of distilled water.
