As for the herbaceous elements, they contain nothing nutritive. Beverage, far from being suppressed, should be augmented, in order to facilitate stomachal digestion and promote general nutrition, though alcoholic liquids must be inhibited; likewise mineral waters, except, perhaps, for occasional use. Both should be replaced by infusions of coffee or tea, taken as hot as can be drank.

Nevertheless, the men of colour, and particularly the Creole negroes, resist much better than any other race, the influence of the climate. Lemonade and infusions of Scoparia dulcis are given to the sick; but the cuspare, which is the cinchona of Angostura, is seldom used.

The active principle of tea is called theine; that of coffee, caffeine, and of cocoa, theobromine. They also contain an aromatic, volatile oil, to which they owe their distinctive flavor. Tea and coffee also contain an astringent called tannin, which gives the peculiar bitter taste to the infusions when steeped too long. In cocoa, the fat known as cocoa butter amounts to fifty per cent. Tea.

Their insignificant infusions lost credit after a time; their absurdly complicated mixtures excited contempt, and their nauseous prescriptions provoked loathing and disgust. A simpler and bolder practice found welcome in Germany, depending chiefly on mineral remedies, mercury, antimony, sulphur, arsenic, and the use, sometimes the secret use, of opium.

Beer, ale, or any other liquor in which herbs are infused, must be unadulterated, or the benefit of these infusions will be destroyed by its pernicious qualities. Nothing is more prejudicial to health than adulterated liquors, or liquors that are debased by any corrupting vegetable substance.

But M. Pasteur replied that they are not there in anything like the number we might suppose, and that an exaggerated view has been held on that subject; he showed that the chances of animal or vegetable life appearing in infusions, depend entirely on the conditions under which they are exposed.

An examination of the boy however, showed he was suffering from a kind of bony tumour. There are several chiefs in Ikoko and one of them also practises as a doctor. He has cleared a space about ten feet in diameter and enclosed it for a consulting room, while an inner chamber, still more closely surrounded, is the secret place where the infusions are made and the charms and fetishes consulted.

He often spent long hours there alone, labelling, decanting, and doing up again; and he looked upon it not as a simple store, but as a veritable sanctuary, whence there afterwards issued, elaborated by his hands, all sorts of pills, boluses, infusions, lotions, and potions, that would bear far and wide his celebrity.

For such a man waits a crown of enduring bays. Slices of this savory ham, fried in a skillet the truth of history forces the reluctant confession that the march of progress had not yet brought the grid-iron and its virtues to the mountains a hot pone of golden-yellow meal, whose steaming sweetness had not been allowed to distill off, but had been forced back into the loaf by the hot oven-lid; coffee as black and strong as the virile infusions which cheer the hearts of the true believers in the tents of the Turk, and cream from cows that cropped the odorous and juicy grasses of mountain meadows, made a breakfast that could not have been more appetizing if composed by a French CHEF, and garnished by a polyglot bill-of-fare.

The Reverend Septimus yielded himself up quite as willing a victim to a nauseous medicinal herb-closet, also presided over by the china shepherdess, as to this glorious cupboard. To what amazing infusions of gentian, peppermint, gilliflower, sage, parsley, thyme, rue, rosemary, and dandelion, did his courageous stomach submit itself!
