Patriotic bakers and housewives all over the country have been trying to produce a wheatless loaf which is light, palatable, and sufficiently durable to stand transportation. The durability is a very important consideration; crumbly corn bread cannot be distributed by bakers nor served to armies. Corn bread and the other quick breads are chiefly home-made products.

Things to be avoided in eating, are hot, fresh baked breads of all kinds; also avoid all manner of pies as you would a pestilence, likewise cakes, of every description; they are the crowning curse. Women will make it and children will cry for it, probably, for all the generations to come, as they have in the past. But more truthful epitaphs should be inscribed over them than is now done.

All dishes known to be difficult of digestion, as hot breads, pastry, cheese, fried dishes, and rich salads, should be cut off the menu, since these readily overtax an already weakened digestive system.
