Many persons use coffee roasters, but some old experienced housekeepers think that the fine flavor flies off more than when done in a dutch-oven, and constantly stirred. If you are careful, it can be done very well in the dripping-pan of a stove. Let the coffee get quite cold, and put it away either in a canister or tight box, and keep it in a dry place.

Refining. We quote Mr Vivian: 'The pigs from the roasters are filled into the furnace through a large door in the side: the heat is at first moderate, so as to complete the roasting or oxidising process; after the charge is run down, and there is a good heat on the furnace, the front door is taken down, and the slags skimmed off.

There are pathetic rows of rabbits, frozen stiff in the bitter cold wind; huge white hares hanging in rows; a tray of pigeons with their iridescent throat feathers catching gleams of the pale sunlight. There are great sacks of nuts, barrels of cranberries, kegs of olive oil, thick slabs of yellow cheese. On such a cold day it was pleasant to see a sign "Peanut Roasters and Warmers."

'Twas somewhat fresh, but none the worse, thought the roasters, for that.

There are some household appointments which, like some of the brass skimmers, platters, engraved foot and hand warmers, chestnut roasters, and the like, have always served the double purpose of use and ornament. Among these are warming pans which in modern days have been brought out of their hiding-places, repolished, and hung up in conspicuous places by the fireside.

This is accomplished by a sorting and winnowing machine, which delivers by separate shoots the cleaned beans, graded according to size, and the dust and foreign matter. A battery of roasters await the survivors of this operation, which are automatically conveyed to the hoppers.

Captain Cook judged that the number of hogs obtained amounted to four hundred or upwards: many of them, indeed, were only roasters, while others exceeded a hundred pounds in weight; but the general run was from forty to sixty. A larger quantity was offered than the ships could contain; so that our countrymen were enabled to proceed on their voyage with no small degree of comfort and advantage.

Peter Siner was too loyal to his new friendship with Cissie Dildine to allow his mother's jealous suspicions to affect him; nevertheless the old woman's observations about the turkey roaster did prevent a complete and care-free enjoyment of the meal. Certainly there were other turkey roasters in Hooker's Bend than Mrs. Arkwright's. Cissie might very well own a roaster.

The exception to this advice may be taken in the case of squab broilers for which some local dealers will not pay as fancy a price as may be obtained by dressing and shipping to the hotel trade. The grower of roasters and capons will probably want to market his own product.

In the daytime, there is hardly a livelier scene in Rome than the neighborhood of the Fountain of Trevi; for the piazza is then filled with the stalls of vegetable and fruit dealers, chestnut roasters, cigar venders, and other people, whose petty and wandering traffic is transacted in the open air.
