Vitus dance, Poe's creatures lived only through their nerves; his women, the Morellas and Ligeias, possessed an immense erudition. They were steeped in the mists of German philosophy and the cabalistic mysteries of the old Orient; and all had the boyish and inert breasts of angels, all were sexless.

They are very good, always retaining the taste of the cherry. If you cannot procure morellas, the large red pie-cherries may be substituted. Wipe off the down with a clean flannel, and put the peaches whole into a stone jar. Cover them with cold vinegar of the best kind, in which you have dissolved a little of salt, allowing a table-spoonful to a quart of vinegar.

Take a peck of morella cherries, and a peck of black hearts. Stone the morellas and crack the stones. Put all the cherries and the cracked stones into a demi-john, with three pounds of loaf-sugar slightly pounded or beaten. Pour in two gallons of double-rectified whiskey.

Add a little brandy, close down the bung when it has done hissing, let it stand six months and bottle it off. CHERRIES IN BRANDY. Weigh some fine morellas, cut off half the stalk, prick them with a new needle, and drop them into a jar or wide-mouth bottle. Pound three quarters of the weight of sugar or white candy, and strew over; fill the bottle up with brandy, and tie a bladder over.

It improves by keeping. Raspberry shrub may be made in this manner; also strawberry. Pick from the stalks, and stone a sufficient quantity of ripe morellas, or other red cherries of the best and most juicy description. Put them with all their juice into a stone jar, and set it, closely covered, into a deep kettle of boiling water. Keep it boiling hard for a quarter of an hour.

They've been to shows year by year, and very well they've stood it. I only hope the constant travelling won't set up fermentation. I should like those Morellas to outlive me. A receipt I had of Jane Thorn, and she died of dropsy, poor thing, and bottled to the end. 'Dunna you ever eat 'em? asked Hazel. This was blasphemy. To eat 1909 Morellas!

Add the juice of as many lemons as you have pounds of sugar, and a few small pieces of ginger. Boil this syrup until thick. Boil the figs in this syrup for fifteen minutes longer. Then fill in glass jars three-quarters full, fill up with boiling syrup and cover. When cold, screw air-tight or seal. The sour red cherries, or "Morellas," are the best for preserves.

Then pour the cherries into a bag, and strain and press out all the juice. Allow a pound of sugar to a quart of juice, boil them together ten minutes in a preserving kettle, skimming them well, and when cold, bottle the liquid; first putting a jill of brandy into each bottle. Mix together six pounds of ripe morellas and six pounds of large black heart cherries.

I know no ceremony that ladies are bound to observe to their husbands, beyond the point of a modest behaviour and decorum: therefore I must protest against the vicarious gluttony of Cerasia, who at her own table sent away a dish of Morellas, which I was applying to with great good will, to her husband at the other end of the table, and recommended a plate of less extraordinary gooseberries to my unwedded palate in their stead.
