Beyond this, to the right, are the tombs of Grétry the composer, Fourcroy the great chemist, Fontenelle, Boileau, Racine, and of Mademoiselle Raucourt, the celebrated actress, to whom the bigotry of the clergy refused burial in consecrated ground in 1815! a circumstance which gave rise to much clamour and dissatisfaction.

The study of these two languages, as FOURCROY has observed to me, is not merely useful to those who wish to acquire a thorough knowledge of the French, which has borrowed from them no small number of words, but it is only from the perusal of the great writers of antiquity, on whom the best among the moderns have formed themselves, that we can imbibe the sentiment of the beautiful, the taste, and the rectitude of mind equally necessary, whether we feel ourselves attracted towards eloquence or poetry, or raise ourselves to the highest conceptions of the physical or mathematical sciences.
The formation of that kind of liquor is founded upon a faculty peculiar to grains, which the learned chymist, Fourcroy, has called saccharine fermentation. Sugar itself does not exist in gramineous substances; they only contain its elements, or first principles, which produce it.
So far back as 1803, Thénard pointed out, in most distinct terms, the important fact that yeast contains a nitrogenous "animal" substance; and that such a substance is contained in all ferments. Before him, Fabroni and Fourcroy speak of the "vegeto-animal" matter of yeast.
Although the literature of France could boast of many men of great talent, such as La Harpe, who died during the Consulate, Ducis, Bernardin de Saint-Pierre, Chenier, and Lemercier, yet they could not be compared with Lagrange, Laplace, Monge, Fourcroy, Berthollet, and Cuvier, whose labours have so prodigiously extended the limits of human knowledge.

The mathematical and physical sciences have made too great a progress in France, their application to the useful arts, to the public service, and to the general prosperity, has been too direct, says FOURCROY, for it not to be necessary to diffuse the taste for them, and to open new asylums where the advantages resulting from them may be extended, and their progress promoted.
