The common food fats are all very well digested if judiciously used not in too large quantities, nor over-heated in cooking, and not "cooked into" things too much as in pastries, rich sauces, and fried foods. Whether we spread our bread with butter or beef drippings amounts to the same thing in the long run; the main point is which we are willing to eat.

They contain a good supply of lime, sulphur, iron, phosphorus and other mineral salts in addition to their protein and fats. It may also be said that milk should be classed as animal food, though it is of special value from a nutritive standpoint. Milk, cheese and other milk products naturally make good substitutes for meat.

Koenig himself asserts that the fats have hitherto been too little investigated to found upon it a method for distinguishing them, but that nevertheless it may possibly do good service in some cases.

When these fats and oils, often called glycerides, are heated with alkali, soda, a true salt of the fatty acid and soda is formed, and this is the soap, whilst the glycerin remains behind in the "spent soap lye." The high fuel value and the small bulk of fats give them a very great practical advantage whenever supplies of food have to be carried for long distances, or for considerable lengths of time, as in sea voyages and hunting and exploring trips.
