In this antithetic reaction of the higher cortical centers and the lower centers in the medulla to acidity we find a remarkable adaptation which prevents the animal from killing itself by the further increase in acidity which would be produced by muscular activity.

Some persons imagine that cream cannot be "too sweet," but that is a mistake; it must have a certain degree of acidity, or it will not produce butter, and if put into the churn without it, must be beaten with the paddles till it acquires it.

Vegetables soon turn sour, and corrode metals and glazed red ware, by which a strong poison is produced. Vinegar, by its acidity, does the same, the glazing being of lead or arsenic.

This is the moral which it is, we contend, the duty of the profession to draw from the daily events of life. The natural secretions of the human stomach are acid, and the acidity is subservient to the digestive functions.

Prevalence of Acidity. The results of experiment station and farm tests are conclusive that the soils of the greater part of all the humid region of the United States show lime deficiency.

Complete air-slaking would not reduce ability to correct soil acidity, the total amount of calcium and magnesium remaining constant, but weight would be added in the slaking, and therefore the value per ton would be reduced.

We observed that the greatest damage was done in those cases which were stowed nearest to the ship's side, and we therefore removed all the rest amidships; a precaution which, had it been sooner known and adopted, would probably have prevented at least a part of the mischief. The vinegar also became frozen in the casks in the same manner, and lost a great deal of its acidity when thawed.
