Their oven has cake in it, or they are skimming jelly, or attending to some other of the so-called higher branches of cookery, while the bread is quickly passing into the acetous stage. At last, when they are ready to attend to it, they find that it has been going its own way, it is so sour that the pungent smell is plainly perceptible.
A good deal of mud and river slime had accumulated on my soul; but these bright waters washed them all away. We returned home in due season for dinner. . . . To my misfortune, however, a box of Mediterranean wine proved to have undergone the acetous fermentation; so that the splendor of the festival suffered some diminution.
The reason, I imagine, why this chyle-making, or saccharine process, has not yet been imitated by chemical operations, is owing to the materials being in such a situation in respect to warmth, moisture, and motion; that they will immediately change into the vinous or acetous fermentation; except the new sugar be absorbed by the numerous lacteal or lymphatic vessels, as soon as it is produced; which is not easy to imitate in the laboratory.
We are not informed if this manufacture has been carried into effect. The sour, nauseous, milky liquor obtained in the process of starch-making, appears, upon analysis, to contain acetous acid, ammonia, alcohol, gluten, and phosphate of lime. The office of the acid is to dissolve the gluten and phosphate of lime, and thus to separate them from the starch.
In fact, it was sour, for the Romans like their bread, and all their preparations of flour, in a state of acetous fermentation, which serves them instead of salt or other condiment.

WHITE LEAD. White oxide of lead is often adulterated by the carbonate of lime. To detect this pour four drams of pure acetous acid, over a dram of the suspected oxide. This will dissolve both oxide and chalk; but if a few drops of a solution of oxalic acid be now poured in, a very abundant white precipitate of oxalate of lime will take place.
The snowy mass, perfectly mixed, kneaded with care and strength, rises in its beautiful perfection till the moment comes for filling the air-cells by baking. A few minutes now, and the acetous fermentation will begin, and the whole result be spoiled. Many bread-makers pass in utter carelessness over this sacred and mysterious boundary.
Whether the distiller's wort stops at the alcoholic fermentation or passes into the acetous, is a chemical question on which hangs his profit or loss; and the brewer, if his business is extensive, finds it pay to keep a chemist on his premises. Indeed, there is now scarcely any manufacture over some part of which chemistry does not preside.
He believes the world to be in a rapid state of sure improvement; and in the ferment which exists everywhere he beholds only a purifying process; not considering that there is an acetous as well as a vinous fermentation; and that in the one case the liquor may be spilt, in the other it must be spoilt. Montesinos. Surely you would not rob us of our hopes for the human race!
