Spinach Juice is very frequently directed to be used as coloring, but scarcely anywhere is any indication given that the juice without preparation is of very little use. It should be prepared as follows: Take a large handful of fresh green spinach, wash it, and remove decayed leaves only; drain well, then pound in a mortar or chopping-bowl until quite mashed.

You could continually fill your stomach to bursting with raw leafy greens and still have a hard time sustaining your body weight if that was all you ate. Maybe Popeye the Sailorman was right about eating spinach.

In times of peace we discuss sweet peas or winter spinach or chrysanthemums on our way into town in the morning, travelling, as most of us do, by the 9.45 train, with season tickets, first class. When our boys went off from us, as they all did early in the war, we felt that it was time for us to do something too. There was not the least difficulty about enrolling the men.

Red aspic is colored with pulp of the red beet stirred into it while liquid and then strained out; green is produced by spinach. The various shades of amber, shading into rich brown, that are so effective when tastefully mingled, are due to caramel coloring. When colored aspic is required for garnishing, pour off a little into separate vessels, and color each as required.

It is used, after being prepared, for dyeing &c. It is said to be the mordant used for a fine blue on woollen. The foliage, which is like Spinach, is gathered during the summer months, and steeped in vats of water.

You should go on with your sweetheart very mild at first; just a-feeling for her finger-tips; and emboldening of her to believe that you are frightened, and bringing her to peep at you as if you was a blackbird, ready to pop out of sight. That makes 'em wonderful curious and eager, and sticks you into 'em, like prickly spinach. But you mustn't stop too long like that.

It needs no footnote to tell about him. Spinach or Dandelion Greens, Parsnips, Beets, Turnips and Carrots are also indicated. Spinach, celery, parsnips, lettuce, cabbage, rutabagas, beets, carrots, tomatoes, cucumbers, and turnips are all good sources of potassium and some of them are available all the year round without canning and drying. But what significance has the "Anti-Scorbutic Property"? Does that not make potatoes indispensable?

When done enough, put it into a sieve to drain, and give it a slight squeeze. Beat the spinach well, then return it to the stewpan with some gravy, pepper, salt, and a piece of butter. Let it stew about a quarter of an hour, stirring it frequently. Serve it up either in a dish by itself, or with poached eggs upon it, according to the occasion for which it is wanted.
