One day, late in October, we were in the apple house getting the crop of winter apples ready for market Baldwins, Greenings, Blue Pearmains, Russets, Orange Apples, Arctic Reds about four hundred barrels of them. We were sorting the apples carefully and putting the "number ones" in fresh, new barrels.
There is, indeed, as great a variety among the maples as among the trees of an apple orchard; some are harvest apples, some are fall apples, and some are winter apples, each with a tint of its own. Those late ripeners are the winter varieties, the Rhode Island greenings or swaars of their kind. The red maple is the early astrachan. Then come the red-streak, the yellow-sweet, and others.
Captain Dimick brought a bag of apples, greenings, some he had kept in the cellar over winter. "Nice to eat on the cars," he told us. Everyone asked us to send postcards. Miss Phinney was especially solicitous. "It'll be just lovely to know where you be and what you're doin," she declared.
Cranberry sauce can be treated in the same way. Many prefer this to plain stewing. Apples cooked in the following way look very pretty on a tea-table, and are appreciated by the palate. Select firm, round greenings; pare neatly and cut in halves; place in a shallow stewpan with sufficient boiling water to cover them, and a cupful of sugar to every six apples.
Well, we had to say good-bye at last to our friend at a cross-road, and we left him learnedly discussing the current prices of apples with a business acquaintance who had just driven up Kings, Rambos, Baldwins, Greenings, and Spigs. And, by the way, in packing apples into barrels, you must always pack them stems down. Be careful to remember that.
The apple is the commonest and yet the most varied and beautiful of fruits. A dish of them is as becoming to the centre-table in winter as was the vase of flowers in the summer, a bouquet of spitzenburgs and greenings and northern spies. A rose when it blooms, the apple is a rose when it ripens.
"And do not take the yellow ones, because they are sweet and only good for baking. Take a nice green apple, not too large, because the smaller ones do just as well and cost less. Let us get half a peck of those greenings. We want oranges for breakfast, too, though Bridget forgot to say so. Can you pick those out, do you think?"
You see they had just been gathering their apples, in that great lower orchard, five acres of trees, and such a splendid crop! There they were, all piled up, can't you imagine? A perfect picture! Red heaps, and yellow heaps; and greenings, and purple pearmains, and streaked seek-no-furthers. Like great piles of autumn leaves!
With that we fell to discussing the kinds and qualities of all the apples grown this side China, and gave our more or less slighting opinions of Ben Davises and Greenings and Russets, and especially of trivial summer apples of all sorts, and came to the conclusion at last that it must have been just after God created this particular "tree yielding fruit" that he desisted from his day's work and remarked that what he saw was good.
The dark cellar was already half filled with potatoes, but the space left for such apples as we should pick was ready. From time to time when returning from the village I had brought up empty barrels; and in some of these, earlier kinds, like tall pippins and greenings, had been packed and shipped to Mr. Bogart.
