Protein, the third food-stuff which we must eat to keep alive, contains the chemical element nitrogen in such form that it can be incorporated in our tissues. Although most persons derive their protein in part from meat, milk, and eggs, it is possible to satisfy the requirements of the body on a purely vegetarian diet.

Many of the people have thin lips and Semitic noses and most are well made. As usual, if one meets a husband and wife, the former strolls ahead with a spear or stick, while the latter follows carrying a baby riding on one of her hips, tied on by her wrap of cloth, and with a heavy load of wood or food-stuff on her head. We cross the river in the evening and dine with Captain Meilleur at Mobaie.

Fat yields more energy and heat than does carbohydrate, bulk for bulk; but fat is burned by our tissues less readily. We instinctively avoid eating a great deal of this food-stuff; in the course of a day the average person consumes no more than one or two ounces. The natural aversion which many feel toward fat may possibly depend upon the difficulty with which they assimilate it.

On Monday morning four of the men put out to a ship going east, but she had got too far for them to reach her, a squall driving her further out. It is curious to think that any day we may be on our way to the Cape, but perhaps we shall not get there at all. A meeting was held last Thursday to consider the quantity of food-stuff a schooner should bring in exchange.

Perhaps such innocent readers will be surprised to learn that bananas and plantains supply the principal food-stuff of a far larger fraction of the human race than that which is supported by wheaten bread. They form the veritable staff of life to the inhabitants of both eastern and western tropics.

Nothing was too small or too big for Westbury to remember, and I can see him now swing his team up to the front step and hear him call out, "Hey, there!" as a preparation to unloading crockery and tinware, dry-goods and notions, garden tools and food-stuff, his wagon full, his pockets full, without ever an oversight or a poor selection.

As chemically combined in the food-stuff known as protein, nitrogen is indispensable to animal life; but our bodies make no use of the gaseous form of nitrogen. Oxygen, on the other hand, supports life; and though it forms less than one-fifth of the atmospheric air, it is present in ample amount for our needs.
