Hazen & Jarvis wrote their partners: "We have purchased a very good and valuable cargo for the schooner Wilmot. It consists of oxen, cows, calves, flour, cyder, boards and bricks, and we have sent her under care of Captain Beck to Newfoundland for sale. We hope we will get a good price for her."
They must be ripe, when you make Cider of them: and is in prime in the Summer season, when no other Cider is good. But lasteth not long, not beyond Autumn. The foundation of making perfect Cyder consisteth in not having it work much, scarce ever at all; but at least, no second time; which Ordinary Cider doth often, upon change of weather, and upon motion: and upon every working it grows harder.
Respect thy orchats: think not that the trees Spontaneous will produce a wholesome draught, Let art correct thy breed." So sang Philips in his Cyder in the distant days of 1706, but the advice is as sound as ever, for good cider can only be produced from the right kinds of apples. The names of new sorts are legion, but some of the old varieties are still considered to be very valuable.
To clear Wine: Take half a pound of hartshorn, and dissolve it in cyder, if it be for cyder, or Rhenish-wine for any liquor: this is enough for a hogshead.
In its application to America and the West Indies, of which the produce and consumption are so very different from those of Great Britain, some modification might be necessary, in the same manner as in its application to the cyder and beer counties of England.
We can easily fancy the neighbors gathering to see the fine clock standing in its place in the hall, telling its monotonous tale all the nights and days. But another interesting record now comes in. This, too, is an event in May: "17. I bottled cyder." And then in October again: "20. Cyder come." Cyder is not a thing to be despised even by a man who knows Latin.

I then went on in search of my comrades, who had by this time left the mountain for the neighbouring valley, and after running down the slope, I found them posted in a house situated at the bottom. They had been in search of provisions, but all they found was a cask of sweet cyder, the French having evidently been there before us and the place having been ransacked of everything but this.
Bills for ordination-expenses abound in items of barrels of rum and cider and metheglin, of bowls of flip and punch and toddy, of boxes of lemons and loaves of sugar, in punches, and sometimes broken punchbowls, and in one case a large amount of Malaga and Canary wine, spices and "ross water," from which was brewed doubtless an appetizing ordination-cup which may have rivalled Josselyn's New England nectar of "cyder, Maligo raisins, spices, and sirup of clove-gillyflowers."
It was charged upon the duties on malt, mum, cyder, and perry, the land-tax at four shillings in the pound, annuities on the sinking-fund, an application of one million from that deposit, and the loan of the like sum to be charged on the first aids of next session.
