There was zamouta, an umbelliferous plant, the seed of which is used in coffee, and habat-assoba for putting in bread; coriander, chili, fennel, and helf, a plant very like tall cress, which is used in cookery and also raw, and which we liked as a salad; also attar, a purple creeping bean, very pretty and good to eat.

The seeds do not have the unpleasant odor of the plant, but have a rather agreeable smell and a moderately warm, pungent taste. Cultivation. Coriander, a plant of the easiest culture, does best in a rather light, warm, friable soil.

Then to a pint of the infusion add half a pound of loaf-sugar, half a pint of white brandy, an ounce of broken cinnamon, and an ounce of coriander seeds. Put it into a glass jar, cover it well, and let it stand for two weeks. Hull a sufficient quantity of ripe strawberries, and squeeze them through a linen bag.

Coriander has been cultivated from such ancient times that its land of nativity is unknown, though it is said to be a native of southern Europe and of China. It has been used in cookery and of course, too, in medicine; for, according to ancient reasoning, anything with so pronounced and unpleasant an odor must necessarily possess powerful curative or preventive attributes!

Drop this with a tea-spoon into boiling lard, and fry these little puffs of a delicate light brown. SPANISH SAUCE. Put some gravy into a saucepan with a glass of white wine, and the same of good broth. Add a bunch of parsley and chives, two cloves of garlic, half a bay leaf, a pinch of coriander seed, two cloves, a sliced onion, a carrot, half a parsnip, and two spoonfuls of salad oil.

This is prepared in savory ragouts well seasoned with salt, pepper, coriander seeds, and capsicums; or, being cut in pieces, is roasted on small iron spits, the morsels taken from the saddle, and the fat of sheep-tails being considered the most dainty. Meats also are preserved by salting, smoking, and drying.

In Europe it is often sown with caraway, which, being a biennial and producing only a rosette of leaves at the surface of the ground the first year, is not injured when the annual coriander is cut. The seed is often sown in the autumn, though spring sowing is perhaps in more favor.
