Extracts, as of vanilla, lemon, bitter almond, &c., should be used with the greatest care, and if possible always be added to an article after it cools, as the heat wastes the strength. Tea and coffee are the most universal drinks, after water. The flavor of both is due to a principle, theine in tea, caffeine in coffee, in which both the good and the ill effects of these drinks are bound up.

Such drinks usually purport to be made from the kola nut, which contains caffeine, or to consist of extracts from the plants which yield cocoa and chocolate, when in reality they consist of artificial mixtures to which caffeine has been added. Those using these beverages are stimulated as they would be by tea or coffee and soon acquire the habit which makes them regular customers.

The theine in tea and the theobromine in cocoa are so similar to caffeine that chemists can not differentiate them. These drinks when first taken cause a gentle stimulation under which more work can be done than ordinarily, but this is followed by a reaction, and then the powers of body and mind wane so much that the average output of work is less than when the body is not stimulated.

*Counts against Caffeine.*—People of vigorous constitutions and of active outdoor habits are injured but slightly, if at all, by either tea or coffee when these are used in moderation. By stimulating the nervous system, thereby causing nervousness and insomnia and interfering with vital organs.

Caffeine, now found identical with theine, but varying in amount in different varieties of coffee, being in some three or four per cent, in others less. The most valuable property of coffee is its power of relieving the sensation of hunger and fatigue.
