THE RANCH, September 29th. This is the country I should like to have a farm in, were I bound to emigrate. In this valley every sort of grain and vegetable seem to grow in the most luxuriant way, and we have been feasting on tomatoes, cabbages, beets, lettuces, etc.

Uncle Dozie seldom talked when he could help it; the chief business and pleasure of his life consisted in superintending his brother's vegetable-garden; he had never been known to take a nap among his beets and cabbages, which he seemed to admire as much. as he did his nieces.

Carrots in another; and this bed had been dug very deep indeed subsoil digging, as it were; two spades' depth, that the roots might strike freely down. Onions in another. Beets in the fourth; both the golden and red varieties; while the narrow slip was half mustard and half cress. Such was the plan here, at least, and here, for a time, all the seeds lay sleeping, as it seemed.

Radishes, onions, and cucumbers are made largely of water. Only a small amount of these should be eaten at one meal as the stomach must work hard to make use of them. Young beets, lettuce, and ripe tomatoes may be eaten by young and old. They contain useful minerals and help keep the body in a healthful condition.

Narrow strips of wheat and rye, which the men were cutting with sickles, and the women in red bodices were binding, alternated with ribands of yellowing oats and grass, and breadths of beets and turnips, with now and then lengths of ploughed land.

At last they came home with a large basket and two nutgalls in it. Then came the question of the vinegar. Mrs. Peterkin had used her very last on some beets they had the day before. "Suppose we go and ask the minister's wife," said Elizabeth Eliza. So they all went to the minister's wife.

Long experience proves that the desired substance is most readily, most abundantly, and most cheaply, obtained from the juices of the plant commonly known as sugar cane, and from the vegetable known as the sugar beet. The mechanical processes employed in producing sugar from cane and from beets, are practically the same.

"I'll tell ye," quoth Habinas, "as near as I can, for my memory is not so good, but that sometimes I forget my own name: However, for the first dish we had a goodly porker, with a garland upon him, and puddings, goose giblets, lamb-stones, sweetbreads, and gizzards round him; there were also beets and houshold-bread of his own baking, for himself, which I would rather have than white; it makes a man strong, and I never complain of what I like.

Rice, potatoes, macaroni, summer squash, celery, cauliflower, young cabbage, peas 20 to 30 minutes. Young turnips, young beets, young carrots, young parsnips, tomatoes, baked potatoes, sweet potatoes, onions, cabbage, cauliflower 30 to 45 minutes. String beans, shell beans, oyster plant, winter squash 45 to 60 minutes. Winter vegetables one to two hours.

Not more than eight pounds of concentrates need be fed, of which one-fifth may be bran, the same amount, or more, of cocoanut oil cake, and the rest corn or barley. With plenty of skim-milk and alfalfa, but little grain or other concentrates will be needed. A few beets will also go well with alfalfa. Pasture and Cover Crop.
