Sugar, salt, spices, and vinegar are all preservatives, and are added to food as much for the purpose of preserving it as for seasoning it. Among the common methods of caring for foods that are to be used at a future time are canning and drying. CANNING, which is discussed fully in another Section, consists in preserving sterile foods in sealed cans or jars.

No wonder that I struggled to repel it; that I fostered the doubt whether money was the only instrument of benefit; whether caution, and fortitude, and knowledge, were not the genuine preservatives from evil. Had I not the means in my hands of dispelling her fatal ignorance of Welbeck and of those with whom she resided?

My companion learnt from the merchants of Cambay that this wonderful venomous nature of the sultan had been occasioned by his having been bred up by his father from a child in the constant use of poison, beginning by little and little, and taking preservatives at the same time. Such is the wonderful fertility of this country that it surpasses all description.

An unwarrantable prejudice has been raised in the minds of many persons against the use of preservatives, but this is due to the fact that the term is not properly understood. In this use, it means anything that helps to preserve or keep safe the food to which it is added.

A student should inform himself concerning the standard methods of testing the properties of structural timber, by bending, compression, shearing, torsion, impact, and the hardness and tension tests, with their relation to heat and moisture, and the methods of seasoning, the use of preservatives, and the effect of the rate of application of the load. Woods vary as to their durability.

They treat the woods with such chemicals as creosote, zinc chloride and other preservatives. The life of the average railroad tie is at least doubled by such treatment. We could save about one and one-half billion board feet of valuable hardwood lumber annually if all the 85,000,000 untreated railroad ties now in use could be protected in this manner.

The enemy retreated in great confusion, and Arnaud, assembling his men for thanksgiving and prayer, spoke so powerfully that both pastor and people, officers and men, were affected to tears. On searching the bodies of the slain, a number of popish charms were found, vainly used as preservatives against the attacks of men who were supposed to be in league with the evil one.

It is splendid for pickling and preserving, but health and life in abundance are the only preservatives needed for the body. Refined sugar should be classed among the condiments. People who live normally lose the desire for it. Grapefruit, for instance, tastes better when eaten plain than when sugar is added.

Hence it will happen, that, where we see learned men, we shall not always see these of the most exemplary character. But the Quakers have long ago adopted a system of prohibitions, as so many barriers against vice, or preservatives of virtue. Their constitution forbids all indulgences that appear unfriendly to morals.

Thus men of active mind retire from their daily business to find recreation in other pursuits some in science, some in art, and the greater number in literature. Such recreations are among the best preservatives against selfishness and vulgar worldliness.
