Curious thing! the phenomena of matter, like those of mind, become intelligible only by supposing them to be produced by unintelligible forces and governed by contradictory laws: such is the inference to be drawn from every page of M. Liebig's book. Is not the weight inherent in atoms the real, eternal, and spontaneous motion of matter?
The vinegar plant, which is closely allied to the yeast plant, has a similar effect upon dilute alcohol, causing it to absorb the oxygen of the air, and become converted into vinegar; and Liebig's eminent opponent, Pasteur, who has done so much for the theory and the practice of vinegar-making, himself suggests that in this case
Logic says yes; and logic is right. I dilute with a few drops of water a little Liebig's extract, that precious standby of the kitchen. I operate with this fluid on six Cetoniae or rosechafers, four in the grub stage, two in the adult stage. At first, the patients move about as usual. Next day, the two Cetoniae are dead. The larvae resist longer and do not die until the second day.

Justus Liebig's manners were no less attractive, but in him genuine amiability was united to the elegance of the man of the world who had long been one of the most distinguished scholars of his day.
The simplicity of Liebig's views, and the popular form in which they have been presented, have given them wide currency, and incorporated them in the common belief and language of our text-books.
