In the individual who dreams, the soul does not act more from itself, than it does in the man who is drunk, that is to say, who is modified by some spirituous liquor: or than it does in the sick man, when he is delirious, that is to say, when he is modified by those physical causes which disturb his machine, which obstruct it in the performance of its functions; or than it, does in him, whose brain is disordered: dreams, like these various states, announce nothing more than a physical confusion in the human machine, under the influence of which the brain ceases to act, after a precise and regular manner: this disorder may be traced to physical causes, such as the aliments the humours the combinations the fermentations, which are but little analogous to the salutary state of man; from hence it will appear, that his brain is necessarily confused, whenever his body is agitated in an extraordinary manner.

The researches in which we have proved the existence of special forms of living ferments in many fermentations, which one might have supposed to have been produced by simple contact action, had established beyond doubt the existence of profound differences between those fermentations, which we have distinguished as fermentations proper, and the phenomena connected with soluble substances.
This heat is so considerable that it may at times be detected by the hand, if the two sides of the bell, one of which is in contact with the objects, are touched alternately. If we immerse beet-roots or turnips in carbonic acid gas, we produce well-defined fermentations in those roots.
I made a study of the ancient and indispensable art of bread-making, consulting such authorities as offered, going back to the primitive days and first invention of the unleavened kind, when from the wildness of nuts and meats men first reached the mildness and refinement of this diet, and travelling gradually down in my studies through that accidental souring of the dough which, it is supposed, taught the leavening process, and through the various fermentations thereafter, till I came to "good, sweet, wholesome bread," the staff of life.
This has been proved to be erroneous. It is an error of the same kind that Liebig again brings forward here. The yeast merely serves as a source of food for these new ferments without taking any direct part in the fermentations of which we are speaking. Our researches leave no doubt on this point, as is evident from the observations on the fermentation of tartrate of lime previously given.
What gives to fermentations certain exceptional characters of which we are only now beginning to suspect the causes, is the mode of life in the minute plants designated under the generic name of ferments, a mode of life which is essentially different from that in other vegetables, and from which result phenomena equally exceptional throughout the whole range of the chemistry of living beings.
As long ago as 1861, we pointed out the slowness and difficulty of the vital action of yeast when deprived of air; and a little way back, in the preceding section, we have called attention to certain fermentations that cannot be completed under such conditions without going into the causes of these peculiarities.
We have devoted the greater part of this chapter to the establishing with all possible exactness the extremely important physiological fact of life without air, and its correlation to the phenomena of fermentations properly so called that is to say, of those which are due to the presence of microscopic cellular organisms.
There will be bloodshed in the streets and the chasing of rulers. There will be, if we do seriously attempt to put the new wine of humanity, the new crude fermentations at once so hopeful and so threatening, that the war has released, into the old administrative bottles that served our purposes before the war.
