If you boil it in a small pot, it is well to change the water, when it has boiled an hour and a half; the fresh water should boil before the half-cooked tongue is put in again. It is nicer for being kept in a cool place a day or two after being boiled. Nearly the same rules apply to salt beef. A six pound piece of corned beef should boil full three hours; and salt beef should be boiled four hours.
Shortly after the beginning of July we freed our prisoners at fair Ransom in Gold-dust; but the Village where we landed them was so poor in common Necessaries, that we were obliged to give them some corned beef and biscuit for their subsistence until they could get up the Country, where there was a Town.
In fact, she only cares for the materials shut up inside her skin. She's a monstrosity of selfishness; that's what she is, no more fit to be a rector's wife, wife of a man like Brenton, than a tin can of corned beef with a crack in it. She's poisonous, Olive, poisonous! Ptomaines aren't in it, by comparison. At least, they're sudden; and she drags it out to all infinity. Poor Brenton!"
We all splashed across the marshy grass to the siding where the stores were. In the empty trucks on the line families were camping, and some had fitted them up like little homes. We found the truck, and with efforts dug out twelve tins of corned beef, a case of condensed milk, one of treacle, and two tins of sugar. We emptied a kitbag and filled it with rice. The hospital was fuller than ever.
We fared well, on rice, beans, and crackers, with canned corned beef, and salmon or any game that had been shot, and coffee, tea, and matte. I then usually sat down somewhere to write, and when the mules were nearly ready I popped my writing-materials into my duffel-bag/war-sack, as we would have called it in the old days on the plains.
He took to me at wance when he hear'd my voice, and then he took more to me when he corned to know me character; and says he to me wan day, 'Barney, says he, 'I'm gittin' tired o' this kind o' life now, and if ye'll agree to stop here as overseer, and sind me the proceeds o' the mine to Rio Janeiro, a great city on the sea-coast, an' the capital o' Brazil, I'll give ye a good share o' the profits.
The bully beef is corned beef and has its origin, mysterious to us, in Chicago, Illinois, or so we believe. It is quite good. But you can get too much of a good thing once too often. So sometimes we eat it, and sometimes we use the unopened tins as bricks and line the trenches with them. Good solid bricks, too! We get soup powders and yet more soup powders.
Duncan had scarcely finished the dishing up of the unsavory corned beef, the only merit of which was that it was sufficiently cooked, when a dispatch came to him from the New York bankers whom he had left in charge of the company's interests in the financial capital. They telegraphed: Tandy reports that you have completely failed to build across county line.
There they unloaded and were told that this would be their new home. The town was full of colored soldiers all armed with muskets. Horns and drums could be heard beating and blowing every morning and evening. The colored soldiers appeared to rule the town. This looked and tasted somewhat like corned beef.
The old-fashioned cellar as a storehouse for a half-year's stock of provisions bins, and barrels by the dozen, of potatoes, apples and cider, corned beef, pork, vegetables, vinegar, and apple-sauce is extinct.
