The best part of the fish caught on this coast is sent post to Paris, in chasse-marines, by a company of contractors, like those of Hastings in Sussex. Nevertheless, we have excellent soles, skaite, flounders and whitings, and sometimes mackarel. The oysters are very large, coarse, and rank.

Lay them before the fire, baste with butter till they are quite brown, and serve with egg sauce. Boil six whitings and a large eel, in as much water as will cover them, after being well cleaned.

When all is in, fill up with sweet Butter well melted and thickened; and so let it stew there a while, to soak well into the fish; which will lie in fine loose tender flakes, well buttered and seasoned. You may eat it with Mustard besides. Boil Whitings as if you would eat them in the Ordinary way with thick Butter-sauce.
