I thank Heaven for the country when I eat my first green peas, when the lettuce is crisp, when the potatoes are delicate and mealy, when the well-fed poultry comes to town, when the ruddy peach and the purple grape salute me at the fruit-stands.

There is nothing there but an assemblage of shabby booths and fruit-stands, and an ancient stone tower in ruins and overgrown with ivy. Leaving this, I came out to the Marian Platz, where stands the column, with the statue of the Virgin and Child, set up by Maximilian I. in 1638 to celebrate the victory in the battle which established the Catholic supremacy in Bavaria.

The cake, however, which prevails at this season of the year comes from the Tyrol; and as the holidays approach, it is literally piled up on the fruit-stands. It is called Klatzenbrod, and is not a bread at all, but and amalgamation of fruits and spices. It is made up into small round or oblong forms; and the top is ornamented in various patterns, with split almond meats.

This was too much; we dismounted and exhibited the ability to defend ourselves, whereupon they tumbled over one another in their haste to get away. But they were at our wheels again before we reached the caravansary. Here they surged through the narrow gangway, and knocked over the fruit-stands of the bazaars.

Near Tehama some Chinese have in the last two years grown large crops of pea-nuts, and have, I was told, realized handsome profits from a nut which will be popular in America, I suppose, as long as there is a pit or a gallery in a theatre; but the pea-nut makes a valuable oil, and as it produces enormously here, it will some day be raised for this use, as much as for the benefit of the old women who keep fruit-stands on the street corners.

Yet all this is in line with much of our practice whereby, in cookery and manipulation, we disguise our foods and show our lack of appreciation of the products themselves.

We left this school and returned to the Toledo by one of those wonderful little side streets already mentioned, which are forever tumultuous with the oddest Neapolitan life with men quarreling themselves purple over small quantities of fish with asses braying loud and clear above their discord with women roasting pine-cones at charcoal fires with children in the agonies of having their hair combed with degraded poultry and homeless dogs with fruit-stands and green groceries, and the little edifices of ecclesiastical architecture for the sale of lemonade with wandering bag-pipers, and herds of nonchalant goats with horses, and grooms currying them and over all, from vast heights of balcony, with people lazily hanging upon rails and looking down on the riot.
