Natterer increased this pressure to two thousand seven hundred atmospheres, or twenty-one tons to the square inch, with the same negative results. The result of Andrews' experiments in particular was the final proof of what Cagniard de la Tour had early suspected and Faraday had firmly believed, that pressure alone, regardless of temperature, is not sufficient to reduce a gas to the liquid state.

A short time after Cagniard de la Tour discovered the yeast plant, Liebig, struck with the similarity between this and other such processes and the fermentation of sugar, put forward the hypothesis that yeast contains a substance which acts upon sugar, as synaptase acts upon amygdalin.

A century and a half elapsed, and the investigation of yeast was recommenced almost simultaneously by Cagniard de la Tour in France, and by Schwann and Kützing in Germany. The French observer was the first to publish his results; and the subject received at his hands and at those of his colleague, the botanist Turpin, full and satisfactory investigation.

These minute organisms had been studied more or less by a host of observers, but in particular by the Frenchman Cagniard Latour and the German of cell-theory fame, Theodor Schwann. These men, working independently, had reached the conclusion, about 1837, that the micro-organisms play a vastly more important role in the economy of nature than any one previously had supposed.

Contemporaneously with these investigations a remarkable discovery was made by Cagniard de la Tour. He found that common yeast is composed of a vast accumulation of minute plants. The fermentation of must, or of wort, in the fabrication of wine and of beer, is always accompanied by the rapid growth and multiplication of these Toruloe.

The siren was adapted from the instrument invented by Cagniard de la Tour, by A. and F. Brown, of the New York City Progress Works, under the guidance of Prof. Henry, at the instance and for the use of the United States Lighthouse Establishment, which also adopted it for use as a fog-signal.

And as the synaptase is certainly neither organized nor alive, but a mere chemical substance, Liebig treated Cagniard de la Tour's discovery with no small contempt, and, from that time to the present, has steadily repudiated the notion that the decomposition of the sugar is, in any sense, the result of the vital activity of the Torula.
