Like vegetable albumen, it is soluble in water, but differs from it in this, that its solution is not coagulated by heat. When the solution is heated or evaporated, a skin forms on its surface, and the addition of an acid causes a coagulum, just as in animal milk.
Flesh foods, called as often nitrogenous foods, from containing so large a proportion of nitrogen, are made up of fibrine, albumen, caseine, gelatine, and gluten; the first four elements being present in flesh, the latter in vegetables. Salts of various forms exist in both animal and vegetable food. In meat, fish, and potatoes are found phosphorus, lime, and magnesia.
Fibrine and albumen, besides having the same composition, agree also in this, that both dissolve in concentrated muriatic acid, yielding a solution of an intense purple colour. This solution, whether made with fibrine or albumen, has the very same re-actions with all substances yet tried.
The globules of the blood contain fibrine and albumen, along with a red colouring matter, in which iron is a constant element. Besides these, the blood contains certain fatty bodies in small quantity, which differ from ordinary fats in several of their properties.
Both of these substances express the result of oxidations going on in the body. The urea and uric acids represent the final result of the breaking down in the body of nitrogenous substances, of which albumen is the type. Unusual constituents of the urine are albumen, sugar, and bile.
When the parent cells come to maturity, they burst and liberate the granules, which immediately develope themselves into new cells, thus repeating the life of their original. Now, it has been asserted, that globules can be produced in albumen by electricity; and if these globules are true germinal vesicles, the difficult problem of producing life by artificial means is entirely solved.
The chief symptoms are shortness of breath, palpitation, and great irregularity of the heart's action; sometimes the heart appears to miss a beat altogether. This is a disease of the blood, characterized by a deficiency of albumen and red corpuscles.
But for all organic bodies, from the amoeba which is a simple and for the most part unprotected piece of albumen with a cell centre in the midst to man, and from the smallest one-celled desmidian to the highest developed plant, the mode is one and the same by which the cells propagate themselves, that is by division.
The albumen of its cut surfaces coagulates at the temperature of a bright, clear fire, or a hot oven, and thus seals up the juices so that only a part of them escape, and those are collected in the form of a rich brown, highly flavored crust, upon the surface of well roasted meat. A good temperature for baking meat is from 320° to 400° Fahr.
There are many arguments, besides the strict analogy between the liquor amnii and the albumen ovi, which shew the former to be a nutritive fluid; and that the fetus in the latter months of pregnancy takes it into its stomach; and that in consequence the placenta is produced for some other important purpose.
