The guinea-fowl is the most numerous of all game-birds. Partridges come next, but do not afford good sport; and quails are rare. Ducks and snipe appear to love Africa less than any other country; and geese and storks are only found where water most abounds.
The delicious flavor of game-birds, and the skill implied in the various arts of the sportsman who devotes himself to fowling, make them favorite objects of the chase, while the beauty of their plumage, as a military and feminine decoration, threatens to involve the sacrifice of the last survivor of many once numerous species.
The number of gallinaceous birds is extremely limited. America can, however, boast of its native wild turkey one of the most magnificent game-birds in existence. There is also the pinnated or Cupid Grouse. The Barren Grounds of Kentucky, and a few other districts, are inhabited by the ruffle grouse, which is also often called the pheasant.
The hunters, now growing very expert in the use of firearms, fairly overloaded the larder of the villa with rare game-birds and venison. The fishers outdid themselves to catch choice fish for their master's family. And every morning fruits and flowers were piled at the doorway for their rulers' pleasure.
A natural preserve for game-birds was a good thing to have. Forty or fifty varieties of water-fowl were found on Norman tables at one time or another. An Iceland Falcon was killed on the little Island of Herm on the 11th of April, 1876, where it had been seen about for some time, by the gamekeeper. It had another similar bird in company with it, and probably the pair were living very well upon the game-birds which had been imported and preserved in that island, as the keeper saw them kill more than one Pheasant before he shot this bird.
The tennis-court was rolled and marked; fishing-tackle was inspected and repaired; in view of the possibility of dancing, the piano was tuned; bridge deficiencies were made good at the local stationer's; and gardeners and gamekeepers hurried about their tasks, while flapping game-birds signalled to trembling trout that the enemy was mobilising for the yearly campaign.

The wild turkey, acknowledged to be the finest of game-birds, ranges throughout the forests of the more temperate portions of America. It is the parent of the valued inhabitant of our poultry-yards; and in its wild state utters the same curious sounds which it does in captivity. This superb bird measures about four feet in length.
