In these days when farming is becoming more and more a question of the farmer's management, and less and less of his personal manual labor, a daughter in a farmer's family already supplied with one or more housekeepers may, as legitimately as a son, study the science of agriculture, or one of its many branches, such as poultry-raising or dairying, and with as certain a prospect of success.
Even as a schoolboy, poultry-raising was a study with me, and I may say without egotism that as early as the age of seventeen I was acquainted with all the best and speediest methods of raising chickens, from raising them off a roost by burning lucifer matches under their noses, down to lifting them off a fence on a frosty night by insinuating the end of a warm board under their heels.
When a boy gets old enough to leave the kindergarten and start in the primary school he mixes agricultural studies with his books. First he plants a small garden and tends it. Then he is taught to raise chickens. Next he learns swine husbandry and then dairying and the handling of horses. The girls learn poultry-raising, butter-making, gardening, cooking, dressmaking and millinery.
Her invention made an epoch in poultry-raising: to-day it is universally known, but in those times it was still passed about as a novelty and received under the seal of secrecy by only a few persons, until at last the almanac published it under the heading, A cure for hawks and kites, or a new method of raising poultry—that meant this garden patch.
Ordinary farming is prosy and tiresome compared with bee-farming. Combined with poultry-raising, it always had special attractions for me. When I was a farm boy of twelve or thirteen years, one of our neighbors had a breed of chickens with large topknots that filled my eye completely. My brother and I used to hang around the Chase henyard for hours, admiring and longing for those chickens.
Practically every white man in the South was interested in agricultural or in mechanical or in some form of manual labor; every white man was interested in all that related to the home life, the cooking and serving of food, laundering, dairying, poultry-raising, and housekeeping in general.
In addition to the agricultural training which we give to young men, and the training given to our girls in all the usual domestic employments, we now train a number of girls in agriculture each year. These girls are taught gardening, fruit-growing, dairying, bee-culture, and poultry-raising.
