No. 3 glass, like No. 1, shows a purple coloring, and the liquid only contains, in place of the starch, dextrine and glucose, i. e, the tissue has had the same action as the cerealine deprived of the tissue, and the cerealine as the tissue freed from cerealine. The same membrane rewashed can again transform the diluted starch several times.

Gum arabic or dextrine are not comparable with good glue for repairs, although with care and attention to the details enumerated here I have known it answer when in pressing haste, and even for a permanency.

Place it on a sieve, and, while working it with one hand, pour a steady stream of water over it with another. Shortly you will find a grayish, tough, elastic lump before you, while in the pan below, when the water is carefully poured off, will be pure wheat-starch, the water itself containing all the sugar, dextrine or gum, and mineral matter.

On being removed from this, it is thoroughly washed, dried, and mounted, by pasting it with starch or dextrine to a card of the proper size. The reader who has followed the details of the process may like to know what are the common difficulties the beginner meets with. The first is in coating the glass with collodion. It takes some practice to learn to do this neatly and uniformly.

The young plant is, to a great extent, composed of starch; as the plant grows older, a substance is produced which is called diastase. Through the influence of this diastase the starch is converted into a peculiar non-crystallizable substance called dextrine, and as the plant matures, this dextrine is transformed into crystallizable sugar.

Separate the residuum in as many definite parts as possible, bottle and label, and keep accurate records as to process, weights, etc., so a reproduction of the experiment can at any time be made: Gelatine, 4 lbs.; asphalt, hard Cuban, 10 lbs.; coal-tar or pitch, 10 lbs.; wood-pitch, 10 lbs.; Syrian asphalt, 10 lbs.; bituminous coal, 10 lbs.; cane-sugar, 10 lbs.; glucose, 10 lbs.; dextrine, 10 lbs.; glycerine, 10 lbs.; tartaric acid, 5 lbs.; gum guiac, 5 lbs.; gum amber, 3 lbs.; gum tragacanth, 3 Lbs.; aniline red, 1 lb.; aniline oil, 1 lb.; crude anthracene, 5 lbs.; petroleum pitch, 10 lbs.; albumen from eggs, 2 lbs.; tar from passing chlorine through aniline oil, 2 lbs.; citric acid, 5 lbs.; sawdust of boxwood, 3 lbs.; starch, 5 lbs.; shellac, 3 lbs.; gum Arabic, 5 lbs.; castor oil, 5 lbs."

Should the paper to be used not be sufficiently sized, dextrine, gelatine, isinglass, or some similar substance must be added to the solution. The paper is sensitized by dipping in this solution and then dried in the dark, and may be kept for some length of time.

It will be seen that cerealine has a grand analogy with albumen and legumine, but it is distinguished from them by the action of the rennet, of the heat of acids, alcohol, and above all by its property of transforming the starch into glucose and dextrine.

Let them remain in the water for an hour or longer. Drain, and wipe perfectly dry with a tea towel. Have ready a quantity of boiling lard. Drop them in, and fry a delicate brown. Drain all grease from them, sprinkle with salt, and serve. Here, in the crisp slices, you will have the much desired dextrine. Or, in other words, your potato is already half digested.

The following is the method of obtaining and studying cerealine. Take the raw embryous membrane, prepared as stated, steep it for an hour in spirits of wine diluted with twice its volume of water, and renew this liquid several times until the dextrine, glucose, coloring matters, etc., have been completely removed.
