The foods that are best for young people such as bread, milk, butter, sugar, and eggs are too frequently scarce in their dietaries owing to their cost; and again, in the case of many girls whose parents are able and willing to provide them with a thoroughly satisfactory diet-sheet, dyspepsia is caused by their refusal to take what is good for them, and by their preference for unsuitable and indigestible viands.

But her greatest success in introducing new dishes has been through the children. Whenever lunches are brought by children, or the school-lunch is a problem, if possible equip a spare room with a gas or a coal stove, sink, tables, chairs, necessary dishes, etc., and let classes under direction of teacher take turns in purchasing food supplies for lunch; cooking and serving lunch; planning dietaries with reference to balanced nutrition, digestibility, and cheapness; washing pots, pans, and dishes; cleaning kitchen; protecting and storing foods; finding risks of spoiling, contamination, infection, fly-visiting; and practicing other forms of kitchen hygiene.

Phosphatic salts are demanded, but so are other salts, fat, and water; and the dietaries that order students to live upon fish, eggs, and oysters, because they are rich in phosphorus, without which the brain starves, err just so far as they make this the sole reason, the real reason being that these articles are all easily digested, and that the student, leading an inactive muscular life, does not require the heavy, hearty food of the laborer.
