SODA AND CREAM OF TARTAR. Some housewives are inclined to use soda and cream of tartar for leavening purposes; but there is really no advantage in doing this when baking powder can be obtained, for some baking powders are a combination of these two ingredients and produce the same result.

In so doing he made use of a figure they had heard him use before that of leaven as representing a hidden but potent and pervading energy: the kingdom of heaven, he had told them, was like leaven hid in meal, gradually leavening the whole of it. He now tells them to beware of the leaven of the Pharisees.

Formerly, it was the custom to mix these leavening substances in this way, and then to add them to the other ingredients. Now, however, in order that all gas produced may be kept in the dough mixture, the soda is sifted in with the dry ingredients and the sour milk is added with the liquid ingredients.

Torricelli and Benedetti were of the third generation after Leonardo, and Galileo, the first to make a substantial advance upon his theory, was born more than a century after him. Only two or three men appeared in a generation who, working alone, could make real progress in discovery, and even these could do little in leavening the minds of their fellowmen with the new ideas.

Opposite to it was the gunroom, a similar enclosure for the juniors. They manned her with a crew of between three and four hundred Royal Navy Reserve men, with a leavening of Royal Navy ratings and a few Marines.

On their own statement the most they hope to do is to spread the leaven of their doctrine into the thinking of other groups of Christians. Their service in this respect is not to be disparaged, for at all times the more orthodox opinion of Christ, so called, needs the leavening of emphasis on the humanity of Christ.

That small band, with the lesson of self-sacrifice, of just and equal laws, of the government of a majority, of unshrinking loyalty to principle, is now leavening this whole continent, and in the fulness of time will leaven the world. By their example, republican institutions have been commended, and in proportion as we imitate them will these institutions be assured.

The history of the masses cannot be written, while they have no history; and none will they have, as long as they remain a mass; ere their history begins, individuals, few at first, and more and more numerous as they progress, must rise out of the mass, and become persons, with fixed ideas, determination, conscience, more or less different from their fellows, and thereby leavening and elevating their fellows, that they too may become persons, and men indeed.

I made a study of the ancient and indispensable art of bread-making, consulting such authorities as offered, going back to the primitive days and first invention of the unleavened kind, when from the wildness of nuts and meats men first reached the mildness and refinement of this diet, and traveling gradually down in my studies through that accidental souring of the dough, which, it is supposed, taught the leavening process, and through the various fermentations thereafter, till I came to "good, sweet, wholesome bread," the staff of life.

And look at what we are doing: scarcely holding our own numerically. Here and there a man comes and declares what God has done for his soul. But what is the Church, what are the Christian men of England, with all their multifarious activities, performing? Are we leavening the national mind? Are we breathing a higher godliness into trade, a more wholesome, simple style of living into society?
