Having calms and light airs, we were three days reaching Gane, near the south end of Gilolo, where we stayed to fill up our water-casks and buy a few provisions. We obtained fowls, eggs, sago, plantains, sweet potatoes, yellow pumpkins, chilies, fish, and dried deer's meat; and on the afternoon of the 29th proceeded on our voyage to Dorey harbour.
Green, red, and yellow capsicums, the end of July, and following month. Chilies, tomatas, cauliflowers, and artichokes, towards the end of July, and throughout August. Jerusalem artichokes for pickling, July and August, and for three months after. French beans and radish pods, in July. Mushrooms, for pickling and for ketchup, in September. Red cabbage, and samphire, in August.
The road to Rainawari seemed curiously devious. A Kashmiri track seldom shies at a hill, but pursues its way, heedless of gradient, for its objective; but this path imitated a corkscrew in its windings, and reduced us to the utmost limit of our patience before, passing through a small village whose dull-coloured houses were enlivened with gorgeous festoons of scarlet chilies, we climbed a steep little hill and found ourselves upon a park-like lawn or clearing, and facing the cluster of rough wooden shanties which compose the Rainawari forest bungalow and its outhouses.
Take the seeds of the peppers, one small white onion and two tomatoes, and grind all together into a pulp, add a little salt and let cook ten minutes. When the chilies are fried turn the remainder of the batter into the tomatoes and boil twenty minutes, then turn this sauce over the peppers.
Onions and garlic, chilies, cucumbers, tomatoes, and brinjalls, may be procured by the white visitor from the more important Arabs, who are undoubted epicureans in their way.
The village houses, low, mud-walled, and thatch-roofed, were seen this season at their best. Gay flowers grew around. Melons and pumpkins, weighted with fruit, ran over the walls. Nearly every roof displayed a patch of vivid scarlet, for the chilies had just been gathered, and were spread out on the housetops to dry.
Near the villages were ornamental lines of chilies and beans and seed plants for oil, with occasional clusters of kowliang, fully twelve and thirteen feet high. In the centre of the fields was a double-storied summer-house, made of straw, the centre of a system of high ropes, decked with bits of rag, running over the crops in all directions.
CHILI VINEGAR. Slice fifty English chilies, fresh and of a good colour, and infuse them in a pint of the best vinegar. In a fortnight, this will give a much finer flavour than can be obtained from foreign cayenne, and impart an agreeable relish to fish sauce.
Our homely vegetables do not flourish, but watermelons, cucumbers, gourds, capsicums, chilies, cocoa-nut cabbage, edible arums, and, where the Chinese have settled, coarse lettuces, radishes, and pulse, grow abundantly, with various other not altogether to be despised vegetables with Malay names.
Boiled with water this forms a thick glutinous mass, with a rather astringent taste, and is eaten with salt, limes, and chilies. Sago-bread is made in large quantities, by baking it into cakes in a small clay oven containing six or eight slits side by side, each about three-quarters of an inch wide, and six or eight inches square.
