The success of the sauce depends upon the proper frying of the onion in it. Chop up fine two ounces of lean ham and a small piece of onion, add a little celery, the stalks of parsley, one clove, one-half tablespoon of pepper, and one-half bay-leaf. Pour over these ingredients a scant one-half cup of vinegar. Cover the saucepan and allow it to boil until it has consumed one-half.
Villeroi Sauce. Make half a pint of white sauce, which, as in the case of béchamel, may be made of fish stock when for use with fish; chop half a dozen mushrooms, and add a gill of the liquor to the sauce, half a saltspoonful of powdered thyme (or one sprig, if fresh), two sprigs of parsley, and half a bay-leaf; simmer for fifteen minutes; strain through a scalded cloth; replace on the fire; add a piece of glaze as large as a hazel-nut, or a tablespoonful of strong meat-gravy, just enough to give it the shade of palest café au lait; thicken with two yolks of eggs, as for Allemande sauce. To make Sausages of Fish. Take the Flesh of Eels, or of Tench, and to either of these put some of the Flesh of fresh Cod, or of Pike or Jack, chop these well together with Parsley, and a few small Onions; season these with a little Salt, Pepper, Cloves in Powder, a little grated Nutmeg, and, if you will, a little powder'd Ginger, with some Thyme, Sweet-Marjoram, a little Bay-Leaf, all dry'd and powder'd; and mix all these well together with a little Butter.
Add a little flour to give body to the sauce, stir well, then remove the bay-leaf, and take the saucepan off the fire. Arrange the platter with pieces of fried bread in a layer on the bottom, then the codfish, and then the sauce poured over it. Remove the bones from three-quarters of a pound of fresh codfish. Cut into slices lengthwise.
In what reign was the first bay-leaf, rewarding the first poet of English song, authoritatively conferred?
