If it is allowed to boil at a high temperature a long time, it becomes tough, for the albumin will coagulate throughout. Salt extracts the water from meat. Therefore none of it should be used in boiling. The meat should be cooked in plain water with no addition. No vegetables and no cereals are to be added.

A well-known variety, called albumin, is found in the white of eggs and in the plasma of the blood, while the muscles contain an abundance of another variety, known as myosin. Cheese consists largely of a kind of proteid, called casein, which is also present in milk, but in a more diluted form.

About this time the daily examination of the urine will begin to show traces of albumin, but this, under strict rest in bed and careful diet, will usually diminish and ultimately disappear. In the event of a relapse, however, or setback from any cause, the kidneys may become violently attacked, and a considerable per cent of the fatal cases die from suppression of the urine.

During their transfer from the food canal, the dissolved nutrients undergo changes, giving rise to the materials in the blood. Thus are the serum albumin and serum globulin of the blood derived from the peptones and proteoses; the dextrose, from the maltose and other forms of sugar; and the fat droplets, from the glycerine, fatty acid, and soluble soap.
