The yellow and white corn meals, milled from different kinds of corn, are practically the same in composition, though slightly different in flavor. The method of milling corn meal makes more difference in the composition than the kind of corn used. The old "water-ground" meal was simply crushed between millstones and only the coarsest particles of bran bolted out.
By the way, could you have a bushel of cornmeal sent to me from Dinwiddie? The kind they have here isn't the least bit like the water-ground sort we have at home, and most of it is yellow. Nobody ever has batterbread here. All the food is different from ours. I suppose that is because most of the people are from the North and West.
Take the trouble to get meal water-ground, from white flint corn, and fresh from the mill. Then you will have something worth spending time and effort upon spending them hopefully. Why, the wisest man can not tell but steam-ground meal is of a flavor wholly unlike that water-ground. The grinding should be neither too fine nor too coarse.
