The substance, however, dissolved from sperm oil after saponification has the appearance of jelly, when the ether or petroleum spirit solution is concentrated and allowed to cool, and the presence of sperm oil can thus be readily detected.

The principal methods which comply with these demands have been carefully studied by Hueble for the purpose of discovering a process of general application; methods founded on the determination of density, freezing, and melting point were compared with those dependent on the solubility of fatty substances in glacial acetic acid or a mixture of alcohol and acetic acid; also the method of Hehner for testing of butter, the determination of glycerine and oleic acid, and at length the process of saponification.

The savor is due to bacterial action and fat saponification, which result in ammonia, glycerine, alcohol, fatty acids and other chemicals in very small quantities. The peculiar colorings which run in streaks through some cheeses that are well ripened are due to molds, bacteria and yeasts.

The oil appears, from some experiments which I made, to be a mixture of a glycerine salt and a cholesterine salt of fatty acids. It distills without much decomposition, giving a brown-yellow oil, which fluoresces strongly, and has a somewhat pungent smell. The molecular weight was determined by saponification with alcoholic potash, and subsequent titration of the excess of potash employed.

The solid mass of elaidin formed was of a darker color than that from olive, almond, and tea oil, but closely resembled that from rape oil. Free Acidity. This was estimated as above described. 100 grammes of oil would require 0.125 gramme caustic potash. Saponification of the Oil.

Either as a skin soap or a soap for scouring wools, I should prefer one containing about 1/2 per cent. of free fatty matter, of course perfectly equally distributed, and not due to irregular saponification. On the average the soap solution for scouring wool may contain about 6-1/2 oz. of soap to the gallon of water.

Saponification of the Oil. The oil saponifies readily on being heated with potash in presence of alcohol, and the amount required to convert it entirely into potash soap was 211 grammes of caustic potash per thousand grammes of oil. There are no saponification numbers for oils that can be considered close to this.

Upon saponifying with alcoholic potash, it was found that 1,000 grammes of oil required 175.2 grammes of potash for complete saponification. The number obtained by Koettstorfer for colza was 178.7, by Messrs. Stoddart for rape oil, 175-179, and by Deering for rape oil, 170.8-175.5.

=Saponification.= In bodies which are very fat and have lain in water or moist soil for from one to three years this process takes place, the fat uniting with the ammonia given off by the decomposition to form adipocere. This consists of a margarate or stearate of ammonium with lime, oxide of iron, potash, certain fatty acids, and a yellowish odorous matter.

With the exception of the stamens, all parts of the inflorescence, inclusive of the long pedicles, are milk-white, and the perfume is as sweet and refreshing as an English spring posy. Chemists tell us that the oil from the kernels contains a green pigment which changes to yellow on saponification, and that the resin is emetic and purgative, and healing when applied as plaster.
