It is useless to think of cutting the cylinder or rod any other way than with the grain, it is seldom if ever done, and moreover involves an expenditure of time and labour that brings no adequate return. The enlargement of the hole must be effected by a good form of tool and this in good condition; peg-hole cutters and fluted rimers are sold for the purpose.

Sometimes the first mode is resorted to with the addition of what is called bushing the peg-hole, that is, after the glueing performance has been gone through, it will last strong enough while the hole is being enlarged, a cylindrical plug of wood being inserted, and glued. This is levelled down and re-bored, to suit the peg or a fresh smaller one.

For this operation the cut out space referred to close by, if not covering the peg-hole, will have to be repeated on the opposite side with great exactness, so as to allow of a single fitting up and filling the intermediate space, the grain running as described before, and which will therefore be when placed in position with the end of the grain towards the spectator looking towards the front of the peg-box.

Do not fill the cask quite full; bung it close the following day, but leave the peg-hole open for a few days, or a week, according to the state of the atmosphere; peg it when you think it is fine; and if it appear to be fast approaching to clearness, and has stood long enough for the attainment of maturity, tap it, and draw it quickly; for porter, in cask, always requires a quick draught, and when it gets flat bottle it off as soon as possible.
