Yesterday in coming through the scrub, we had collected a large quantity of ripe native lemons, of which, it being Sunday, we intended to make a tart; but, as my companions were absent, the treat was deferred until their return, which was on Monday morning, when we made them into a dish very like gooseberry-fool; they had a very pleasant acid taste, and were very refreshing.

Here Granny was amusing herself picking gooseberries which the notable Prissy was to convert into gooseberry-fool, one of the dishes projected to grace the town lady's supper when Mistress Betty was led towards her. It was always a trying moment when a stranger at Mosely was presented to old Madam Parnell.

I had a tame rat when I was a boy, and I loved that animal as only a boy would love an old water-rat; and one day it fell into a large dish of gooseberry-fool that was standing to cool in the kitchen, and nobody knew what had become of the poor creature until the second helping. I do hate wet weather in town. At least, it is not so much the wet as the mud that I object to.

RHUBARB SAUCE. To make a mock gooseberry-sauce for mackarel, reduce three dozen sticks of rhubarb to a marmalade, and sweeten it with moist sugar. Pass it through a hair sieve, and serve it up in a boat. Mock gooseberry-fool is made of rhubarb marmalade, prepared as for a pudding. Add a pint of good thick cream, serve it up in glasses, or in a deep dish.
