If, on receiving the animals, any of them should appear exhausted by the journey, they may sometimes be revived by aerating the water in which they are by means of a syringe. It should always be remembered, that, though living in the water, they need a constant supply of air.

So far as we know, there are four practicable methods of aerating bread, namely, by fermentation; by effervescence of an acid and an alkali; by aerated egg, or egg which has been filled with air by the process of beating; and, lastly, by pressure of some gaseous substance into the paste, by a process much resembling the impregnation of water in a soda fountain.

As in most groups of animals, important organs, such as those for propelling the blood, or for aerating it, or those for propagating the race, are found nearly uniform, they are considered as highly serviceable in classification; but in some groups all these, the most important vital organs, are found to offer characters of quite subordinate value.

PHYSICAL LEAVENING consists in aerating, or incorporating gas or air into, a mixture that is to be baked, and it is based on the principle that air or gas expands, or increases in volume, when heated. It is definitely known that when air is incorporated into dough and then heated, the air increases 1/273 of its own volume for each degree that the temperature is increased.

In well-managed distilleries, the custom of aerating the wort and the juices to render them more adapted to fermentation, has been introduced.
