It is obvious that the rear-supper was susceptible of becoming the most important and costly part of an entertainment; and that it frequently assumed extravagant proportions, many passages from our early poets might be adduced to prove. It consisted of three courses, which seem to have been the customary limit.

That was the 5th of January; and this was the evening of the 10th. There was a mournful rear-supper at Cardiff Castle that night; and no member of the household, except the wearied Bertram Lyngern, thought of sleep. Maude was busied in making up money and jewels into numberless small packages, under the orders of the Dowager, to be concealed on the persons of Le Despenser and his attendant squire.

A few common-place questions were asked and answered; but when the Dowager suggested that "the Lady" must be tired with her journey, and would probably like to rest for an hour ere the rear-supper was served, it was a manifest relief to all. A sudden incursion of so many persons into an unprepared house was less annoying in the fourteenth century than it would be in the nineteenth.

That is to say, our Saxon precursors were satisfied as a rule with two repasts daily, but to this in more luxurious times were added the supper and even the rear-supper, the latter being, so far as we know, a second course or dessert and the bipartite collation corresponding to the modern late dinner.
