The following manipulations are adopted in testing olive oil: Equal parts of glacial acetic acid and water are mixed in a bottle. Then 1 c.c. of pure oleic acid, 3 c.c. of 95 per cent. alcohol, and 2 c.c. of acetic acid are put in a small tube graduated in tenths of cubic centimeters.

The only reaction based upon the chemical constitution of fat is produced by treatment of oleic or linoleic acid with nitrous acid, which therefore is of some value in the examination of drying oils.

In making these palm-oil soaps it is better to err on the side of a little excess of free oil or fat, but if more than 1 per cent. of free fat be present, lathering qualities are then interfered with. Oleic acid soaps are excellent, but are rather expensive for wool; they are generally used for silks.

In conclusion, I should say that but a small proportion of the fatty acids exist in the wool oil uncombined; that the proportion of oleic acid is small, and can only be obtained in an oxidized condition; that the main portion of the fatty acids is composed of stearic and palmitic acids in nearly equal proportions; that the existence of a fatty acid, containing a higher per cent. of carbon than those mentioned, is not fully established.

The principal methods which comply with these demands have been carefully studied by Hueble for the purpose of discovering a process of general application; methods founded on the determination of density, freezing, and melting point were compared with those dependent on the solubility of fatty substances in glacial acetic acid or a mixture of alcohol and acetic acid; also the method of Hehner for testing of butter, the determination of glycerine and oleic acid, and at length the process of saponification.

In like manner the estimation of the oleic acid, which was conducted essentially in the manner proposed by Koenig, showed that the amount of oleic acid in different olive oils varied from 45 to 54 per cent.

Additional evidence of the large proportion of oleic acid was furnished by forming the lead salt, and treating with ether, in which lead oleate is soluble, the stearate and palmitate being insoluble. In this way it was found that the oleic acid obtained from the ethereal solution of the lead salt amounted to 83.15 per cent. of the oil.
