The Germans to-day eat wild boar, head-cheese, pickles, goose's flesh dried, sausages, cheese, and salads for supper, and wash down with beer. The French, under Louis XIV., began to make the supper their most finished meal. They used gold and silver dishes, crystal cups and goblets, exquisite grapes crowned the ,pergne, and choicest fruits were served in golden dishes.
He could remember his mother helping his father make the sausage and head-cheese and pickle the pigs' feet, which they took turns in selling at as great a price as they could extort from the townspeople.
First and foremost, was a mighty pewter dish, big as Achilles' shield, sustaining a pyramid of smoking sausages. This stood at one end; midway was a similar dish, heavily laden with farmers' slices of head-cheese; and at the opposite end, a congregation of beef-steaks, piled tier over tier.
