These are the cinnamon oil, castor oil, margosse oil, mee oil, kenar oil, meeheeria oil; and both clove and lemon-grass oil are prepared by Europeans. The first, which is the cinnamon oil, is more properly a kind of vegetable wax, being of the consistence of stearine.

These ingredients are, among others, the cayenne or chili-pepper, turmeric, sarei or lemon-grass, cardamums, garlick, and the pulp of the coconut bruised to a milk resembling that of almonds, which is the only liquid made use of. This differs from the curries of Madras and Bengal, which have greater variety of spices, and want the coconut.

Kenar oil and meeheeria oil are equally coarse, and are quite unfit for any but native purposes. Lemon-grass oil, which is known in commerce as citronella oil, is a delightful extract from the rank lemon grass, which covers most of' the hillsides in the more open districts of Ceylon. An infusion of the grass is subsequently distilled; the oil is then discovered on the surface.
