Choose a moist day, and an hour before sunset plant out some savoys, cabbages, and red cabbages. Draw the earth carefully up to their stems, and give them a few gentle waterings. JUNE. Transplant the cauliflowers sown in May, give them a rich bed, and frequent waterings. Plant out thyme, and other savoury herbs sown before, and in the same manner shade and water them.

At the crossway in the Rue des Halles cabbages were piled up in mountains; there were white ones, hard and compact as metal balls, curly savoys, whose great leaves made them look like basins of green bronze, and red cabbages, which the dawn seemed to transform into superb masses of bloom with the hue of wine-lees, splotched with dark purple and carmine.

Different growers differ in their standard of a Stone Mason cabbage, in earliness and lateness, and in the size, form, and hardness of the head.

Take off the ox palate, shred small, some cock's combs blanched, an ounce of morels cut in pieces, four large heads of celery well washed, and cut small, with the heart of four or five savoys, about as big as a turkey's egg, put in whole; cover it close, and let it stew softly for an hour and a half.

Cabbage seed of almost all varieties are nearly round in form, but are not so spherical as turnip seed. I note, however, that seed of the Savoys are nearly oval. In color they are light brown when first gathered, but gradually turn dark brown if not gathered too early.

Sow Cos and imperial lettuce, and transplant the finer kinds. In the beginning of the month, sow Dutch parsley for the roots.

STEWED SAVOYS. These may be done in the same manner as red cabbage; but the better way is to boil the savoy in water till about half done, and then stew it. This takes off the strong flavour, and makes it much more agreeable.

Split the savoys in half and place them perpendicularly round the mould to line it; break up the ratafias and put them also in the mould. Dissolve the gelatine, stir it, when cool, into the sweetened and flavoured custard, and pour this gently over the cakes. The mould should be turned out for eating. Rice Cup. Press warm rice, boiled with milk till well soaked and stiff, into a buttered cup.
