As I came out of Kongra-Tonga's lodge one morning, Reynal called to me from the opposite side of the village, and asked me over to breakfast. The breakfast was a substantial one. It consisted of the rich, juicy hump-ribs of a fat cow; a repast absolutely unrivaled.

The praises lavished by our guides upon the delicacy of this viand their talk over the camp-fire, about "fat cow" and "boudins" and "hump-ribs," quite tantalised our palates, and we were all eager to try our teeth upon these vaunted tit-bits. No buffalo appeared yet, and we were forced to chew our bacon, as well as our impatience, for several days longer.

The tongues, humps, and marrow-bones are regarded as the choice parts of the animal. The tongue is taken out by ripping open the skin between the prongs of the lower jaw-bone and pulling it out through the orifice. The hump may be taken off by skinning down on each side of the shoulders and cutting away the meat, after which the hump-ribs can be unjointed where they unite with the spine.

The latter, tough as he was, furnished us an excellent supper from his tongue, hump-ribs, boudins, and marrow bones, and we all lay down to sleep and dream of the sports of to-morrow. Next morning, just as we were preparing to resume our journey, a gang of buffalo appeared upon one of the swells, at the distance of a mile or a mile and a half from our camp.

Several who had a relish for fresh meat galloped back to strip the two bulls of the remaining tit-bits; but before midnight all had returned; and to the accompaniment of the hump-ribs spurting in the cheerful blaze, I recounted the details of my adventure. The bison universally, though improperly, called buffalo is, perhaps, the most interesting animal in America.

Some carry the sides and quarters; others the hump-ribs, the tongue, the heart, and liver the petits morceaux wrapped up in the skins of the slaughtered animals. They arrive in camp, and fling their loads to the ground. Now begins a scene of noise and confusion. The savages run to and fro, whooping, chattering, laughing, and dancing. They draw their long scalping-knives, and hew off broad steaks.

It would not be long before they should come across the buffalo, and with the delicious "hump-ribs" in plenty, hunters rarely long for other luxuries. All three felt satisfied that the buffalo-range was not far off, and that by keeping due westward they would soon be gratified with the sight of large droves of these animals. They resolved, however, to act with caution.

We entered, and seated ourselves around a good-sized table, upon which smoked several savoury and inviting dishes. Some of these we recognised as old acquaintances, while others were new to us. We found venison-steaks, with buffalo tongues and hump-ribs, the daintiest portions of that animal. There were fresh-cooked fowls, and eggs of the wild turkey boiled and dressed in omelettes.

They spit them over the blazing fires. They cut out the hump-ribs. They tear off the white fat, and stuff the boudins. They split the brown liver, eating it raw! They break the shanks with their tomahawks, and delve out the savoury marrow; and, through all these operations, they whoop, and chatter, and laugh, and dance over the ground like so many madmen. This scene lasts for more than an hour.
