Pancreatic juice emulsifies fat, and we have just seen how greedily worms devour fat; it dissolves fibrin, and worms eat raw meat; it converts starch into grape-sugar with wonderful rapidity, and we shall presently show that the digestive fluid of worms acts on starch.
Combined with the bile, this juice acts upon the large drops of fat which pass from the stomach into the duodenum and emulsifies them. This process consists partly in producing a fine subdivision of the particles of fat, called an emulsion, and partly in a chemical decomposition by which a kind of soap is formed.
It furthermore emulsifies the fat or divides it into extremely fine drops. The food passes now into a long coiled pipe the small intestine. This secretes the intestinal juice which further assists the pancreatic juice.
