As I think of it, now that it is written, this story bears no very close relationship to my original subject, and yet it seemed to follow naturally enough as I set it down, and to belong with the simple and well-flavoured things of the garden and fields; and recalling the advice of Cobbett to his nephew on the art of writing, "never to alter a thought, for that which has come of itself into your mind is likely to pass into that of another more readily and with more effect than anything which you can by reflection invent," I leave it here just as I wrote it, hoping that the kinship of my genial old friend with simple and natural and temperate things may plainly appear.

Of all eating-places James liked best to come here; there was something unpretentious, well-flavoured, and filling about it, and though he had been to a certain extent corrupted by the necessity for being fashionable, and the trend of habits keeping pace with an income that would increase, he still hankered in quiet City moments after the tasty fleshpots of his earlier days.

He evidently did not credit the denial of the truth of what he had heard, nor yet the assertion, in answer to another question, that English hothouse grapes are three or four times as large as the ordinary grapes of France, and well-flavoured in at least a like proportion.

Take a fowl and blanch it, also a fine sweet bread, parboil them, then cut off in smooth well shaped slices, all the white part of the fowl, and slice the sweetbread in similar pieces, place them together in a fine well-flavoured veal gravy; when done, serve neatly in the dish, and pour over a fine white sauce, any that may be approved, the remainder of the fowl must be cut up in small joints or pieces, not separated from the bone, and fried to become brown, then place them in a stew-pan with forcemeat balls, truffles, and morels; pour over half or three quarters of a pint of beef gravy, and simmer till finished; a little mushroom ketchup, or lemon-pickle may be added; in this manner two very nice entrées may be formed.

Beat them with a fork to a smooth, soft pulp, add a slice of butter, a spoonful of moist sugar, a little vanilla essence, a few currants, and one beaten egg. Three parts fill a buttered cup with the mixture, and bake till firm. A little well-flavoured jelly, broken up and put into a cup, will always be a welcome addition to a repast of this description.

Of Amphibia, only a small kind of toad is met with. There is no great variety in the kinds of fish, but the individuals are numerous, especially a well-flavoured sort of salmon, and herrings; a Pleuronectes several feet long, and a reddish yellow Perca two feet long and very thick, are extremely abundant.

Although I am not a good or bad Templar, nor yet a small brass Band of Hope, I confess to a large weakness for tea good, nice, well-flavoured tea. I have, however, found it somewhat difficult to obtain. Occasionally I taste it at the houses of friends who buy their tea in chests at a time; but as for getting such tea at the usual grocers' shops I have found it difficult, if not impossible.

The species found in Lombock is about the size of a small hen, and entirely of dark olive and brown tints. It is a miscellaneous feeder, devouring fallen fruits, earthworms, snails, and centipedes, but the flesh is white and well-flavoured when properly cooked. The large green pigeons were still better eating, and were much more plentiful.

For the vole, guided as he was by his appetite, the most wholesome vegetable food was a ripe, well-flavoured seed. It contained all that the plant could give; leaf and stalk were tasteless compared with it, and were accepted only as a change of diet, or as a medicine, or as a last resource.

These preparations are so frequently mentioned in modern cookery, that we shall give the receipts for them, although they are not appropriate for the Jewish kitchen. Velouté is a fine white sauce, made by reducing a certain quantity of well-flavoured consommé or stock, over a charcoal fire, and mixing it with boiling cream, stirring it carefully till it thickens.
