One kind, a white fish, the Coregonus albus of naturalists, but which is named "tittameg" by the fur-traders, they caught in great plenty. This fish is found in nearly all the lakes and rivers of the Hudson's Bay territory, and is much prized both by whites and Indians for its delicate flavour.

The Whitefish served in the marble palaces of other lands is as mere dish-water to champagne, when compared with the three times purified and ten times intensified dazzling silver Coregonus as it is landed on the bleak shores of those far-away icy lakes. So I could not say 'No' to the Indian boys when they wanted to wait here, the last point at which they could be sure of a catch.

All others are mere dilutes and cheap imitations, but the Coregonus is at all times and par excellence "The Fish." Nevertheless, in looking at it I could not help feeling that this is the fat swine, or the beef Durham of its kind.

The most esteemed fish is the Coregonus albus, the attihhawmeg of the Crees, and the white-fish of the Americans. Its usual weight is between three and four pounds, but it has been known to reach sixteen or eighteen pounds. Three fish of the ordinary size is the daily allowance to each man at the fort, and is considered as equivalent to two geese, or eight pounds of solid moose-meat.

It is the Coregonus signifer of ichthyologists. It is a species of grayling, and frequents sharp-running water, where it will leap at the fly like a trout. Several kinds of trout also inhabit the Great Slave Lake, and some of these attain to the enormous weight of eighty pounds! A few were caught, but none of so gigantic proportions as this.

Among the special advantages of these last are the device by which meals are served in the fresh atmosphere of what is practically the upper deck, the excellent service of the neat lads who officiate as waiters and are said to be often college students turning an honest summer penny, and the frequent presence in the bill of fare of the Coregonus clupeiformis, or Lake Superior whitefish, one of the most toothsome morsels of the deep.
