Take a houghil of beef, break it small and put it into a stew-pan, with part of a neck of mutton, a little whole pepper, an onion, and a little salt; cover it with water, and let it stand in the oven all night, then strain it and take off the fat; pare six or eight middle-siz'd cucumbers, and slice them not very thin, stew them in a little butter and a little whole pepper; take them out of the butter and put 'em in the gravy.

Beat and flatten them. Season them with pepper and salt, and put them into a stew-pan, with barely sufficient water to cover them, and some sliced carrots, turnips, onions, potatoes, and a bunch of sweet herbs, or a few tomatas. Let the whole stew slowly about three hours, or till every thing is tender. Keep the pan closely covered, except when you are skimming it.

This Liquor should nearly cover the Carps; so that if the Gravy and Claret, mention'd above, be not sufficient, add equal quantities of each till you have enough; cover this close, and set the Stew-pan over a gentle Fire, till the lower-side of the Fish are stew'd enough; then turn them, and keep them stewing as before, close cover'd, till they are enough; after which, lay them in a Dish upon Sippets of fry'd Bread, and strain off the Sauce to be thicken'd and brown'd with burnt Butter.

When you have browned it in the butter, sprinkle on a little salt and cayenne pepper, and pour in a very little boiling water. Add a glass of champagne or other wine, or a large tea-spoonful of mushroom catchup, or of walnut pickle. Cover the pan closely, and let it stew till the kidney is tender.

A white Fricassee of Rabbits. From the same. So, armed with the turk's-head brush, the policeman ascended Mrs. Gammer's small, steep staircase. When he reached her bedroom, he poked into every cranny and corner with the handle of his brush. But no cock was to be found. He descended the stairs, and stood again in the little kitchen. A savory smell of cooking arose from a stew-pan on the fire. "Where's the critter gone to?" he demanded.

He sold Mattie a stew-pan and he would not go in to tea this time, but they stood and talked in the yard for the best part of an hour, while Selena glared at them from her kitchen window. Their conversation was most innocent and harmless, being mainly gossip about what had come and gone during Jed's exile.

Half boil a well-cleaned calf's head, then cut off all the meat in small square pieces, and break the bones; return it to the stew-pan, with some good stock made of beef and veal; dredge in flour, add fried shalot, pepper, parsley, tarragon, a little mushroom ketchup, and a pint of white wine; simmer gently until the meat is perfectly soft and tender.

He had brought out, from the pack, granite-ware plates and cups, a stew-pan and a coffee-pot, a ruddied paper of meat and a can of peas, rolls, Johnny-cake, maple syrup, a screw-top bottle of cream, pasteboard boxes of salt and pepper and sugar.
