Fish pies and fruit pies, jellies, honey cakes and tarts, biscuits of all descriptions, including maccaroons and gingerbread, vegetables far more numerous than we use, salads, cucumbers, melons, and all fruits in season, puddings of semolina, millet, and rice, almonds, spices, pickles went to make up a menu by no means despicable.

The luncheon, too, is rarely inspired: they eat cold joint of beef with pickled beetroot, or mutton and boiled potatoes, with unfailing regularity, finishing off at most hotels with semolina pudding, a concoction intended for, and appealing solely to, the taste of the toothless infant, who, having just graduated from rubber rings, has not a jaded palate.

It missed him by an inch, and crashed against a plaster statuette of the Infant Samuel on the top of the piano. It was a standard loaf, containing eighty per cent of semolina, and it practically wiped the Infant Samuel out of existence. At the same moment, at his back, there sounded a loud, wrathful snort. He spun round.

The dough of maccaroni is obtained by mixing pure wheaten flour with semolina in certain proportions, only water being used for the purpose, whilst the task of kneading is carried out in primitive fashion by means of a lever worked continuously by two or more men.

By mixing in the way indicated above, a batter perfectly free from lumps is easily obtained. Cook a heaped tablespoon of semolina in 1/2 pint of milk to a stiff paste. Spread it on a plate to cool. When quite cold, cut it into four. Dip in a beaten egg and fry brown. Serve hot with lemon sauce. This may also be served as a savoury dish with parsley sauce.

There was no moon, but a fountain of sparks spouted towards the stars; and though it was night, the sky was blue with the fierce blue of steel. Some of the Agha's black Soudanese servants had made kous-kous of semolina with a little mutton and a great many red peppers.

They sold recipes or manufactured products: the Citeaux order, chocolate; the trappists, semolina; the Maristes Brothers, biphosphate of medicinal lime and arquebuse water; the jacobins, an anti-apoplectic elixir; the disciples of Saint Benoit, benedictine; the friars of Saint Bruno, chartreuse.
